Originally from Havana, this iconic Cuban cocktail is a refreshing balance of Rum, Lime and fresh Mint.
What you’ll need…
- 50ml Hill Billy Straight Up White Rum
- 25ml Lime Juice
- 25ml Simple Syrup
- 50ml Soda Water
- 5-6 Mint Leaves – (Plus, a few extra Mint Leaves and three Wheels of Lime for the garnish)
Glassware – Highball or a cocktail glass
How you build it…
- Start by muddling (gently mash to release the juices) the mint in a cocktail shaker.
- Then half fill the cocktail shaker with ice cubes, followed by the Lime Juice, Simple Syrup and Rum.
- Give it a good shake for at least 10 seconds (until frosty on the outside) and then strain into a cocktail glass.
- Top up the glass with a splash of soda water.
- Finish by garnishing with the remaining Mint Leaves and pop a few Wheels of Lime in the glass.
How to make the simple syrup
Add equal volumes of water to sugar in a saucepan (i.e., a cup of water and a cup of sugar) and bring to the boil – stirring constantly. Reduce the heat and simmer for a couple of minutes. Set aside to cool.
(Simple Syrup will keep in an airtight container in the fridge for a month)
