Over the last couple of years Glyn and Lloyd have been working on the recipe for Hill Billy Gin.

The journey to date has included lots of research, development and tasting with input from many talented local food and drink heroines and hero’s. One of the key areas they have been working on is the maceration process, where the organic alcohol reacts with the chosen botanicals to create a unique smooth yet floral gin.

Being located in rural Herefordshire, the apple plays a key part in giving a fruity soft undertone that reflects the Golden Valley and all the beautiful surrounding orchards.

Currently in Herefordshire you can pick up a bottle of Hill Billy Gin in Ross-on-Wye from Truffles Deli, they also serve great coffee! In Hay-on-Wye you can get a bottle from Hay Deli, if you want to try before you buy a bottle you can enjoy a G&T with your food in the Tapas bar, the chorizo in Herefordshire cider is very good, or in the recently reopened Three Tuns they have a full Gin menu available.

If your up in the Hills near Michaelchurch Escley pop in to the wonderful local shop, Hope of Longtown (the next village along) or you could even grab a bottle when you fill up with petrol and get an ice cream from Locks garage, it’s a local ritual!!

However if you are not planning a trip to Herefordshire soon or are not lucky enough to live here then you might be able to find a bottle at one of the many food festivals or country fairs across the country perched amongst the proper farmhouse cider on Gwatkin cider stand.
